What Does Cinnamon Smell Like?

Cinnamon smells like warm bark: sweet, dry, a little peppery, with a heat that sits on your tongue even when you are only smelling it. The candle version often goes full bakery — sugar, vanilla, a fake “Christmas market”. Real cinnamon is thinner and woodier than that. It is a tree bark, not a cake.

The actual smell

• Sweet woody spice — the main line.
• Pepper / heat — cinnamaldehyde. This is what makes cheap cinnamon candles feel aggressive.
• A dry, dusty finish — like opening a spice tin that has been in the cupboard since 2014, which is not an insult.

Cassia (the supermarket “cinnamon”) is louder and more fiery. Ceylon is finer, almost floral. Most candles are cassia because it reads clearly across a room.

In a candle

Heart note, with a top that flashes. It throws hard. That is why every November the shops smell of nothing else. The problem is the heat: overdosed cinnamon in a hot wax pool can smell like a scratch-and-sniff sticker, and in a small room it can tickle the throat.

We would rather dose it as a thread inside something bigger — wood, peel, a bit of smoke — than as the whole show. Soy-coconut and a trimmed wick keep it from going acrid. If your cinnamon candle smells burnt, the wick is too long. Not the spice.

When to burn it

Cold nights. Baking days, if you want the house to keep going after the oven is off. It will fight with fish and with very floral candles. It likes wool and it likes a closed door so it can settle.

Cinnamon vs clove? Clove is more dentist-eugenol, denser, less sweet. Cinnamon is bark and heat.
